Dahab is a year-round destination, but the desert runs to different rules than the coast — it heats up fast by day and cools sharply after dark. The most comfortable months for a safari are roughly October to April, when daytime desert temperatures are pleasant rather than punishing. In the deep summer (June to August) stick to a sunset or night slot and skip anything at midday, when the desert is fierce. Whatever the season, evenings in the Sinai desert get cold once the sun is down — the same clear, dry air that makes the stargazing so good also drops the temperature quickly — so an evening safari means you'll want a warm layer for the dinner-and-stars portion.

• Sunglasses and a buff, bandana or scarf to keep dust off your face while riding.
